Happy Thanksgiving everyone!! I hope you all got to spend it with the ones you love. The MR. and I spent the day baking pies, watching the Macy's Thanksgiving Day Parade followed by The National Dog Show, eating way too much food
with our families and a little late night shopping at Forever 21. Pretty perfect day if you ask me!
This was the first time I had ever tried baking a pecan pie and I must say it was super easy
and it turned out pretty delicious! Try the recipe for yourself! XO
What You Will Need...
1 cup light brown sugar, packed 1/2 cup granulated sugar 2 large eggs 1 cup chopped pecans 1/2 cup (1 stick butter), melted 2 tablespoons milk 1 tablespoon all-purpose flour 1 1/2 teaspoons vanilla extract One 9-inch deep dish pie shell, unbaked, or homemade pastry 1 cup pecan halves
Preheat the oven to 325 degrees F.
In a large mixing bowl, mix the brown sugar, granulated sugar and eggs until creamy. Add the chopped pecans, melted butter, milk, flour and vanilla extract and stir to combine. Pour the mixture into the pie shell. Arrange the pecan halves on top of the pie in a circular pattern.
Bake the pie for 55 minutes. Check for doneness by shaking the pan slightly. The pie should be firm with only a slight jiggle in the center. It will set more as it cools.
Tis the season... and holy moly this is going to be a busy week. There is no such thing as days off, weekends or sick days during the holiday retail season and this is the make it or break it week. Between prepping 3 photoshoots, processing tons of new arrivals, organizing 2 events, planning a buying trip, interviews, new designs in production, moving into our new warehouse, house hopping on Thanksgiving, visiting friends, running a huge Pink Friday/Cyber Monday Sale for shopspoiled.com and the MR's show in Hollywood this Friday that doesn't leave too much time for anything else...
